Renegade Pickles
For a dinner party a few nights ago, we started off with these delicious Cucumber and Radish pickles. The recipe comes courtesy of my good friend Johnny, who’s just in the final moments of the road trip of a lifetime–driving from London to Mongolia–as one of three Renegade Pencils. A little sweet, with a bit of kick, the pickles were indeed a hit. And a hit not only before dinner, but the next day as well, as one of our lovely guests shared. After learning there were some homemade pickles in her midst, our friend’s grandmother quickly abandoned her usual breakfast and delighted in their spicy sweet goodness immediately. Who could blame her? Using rice-wine vinegar, red chili paste and coriander seeds, and served with fresh cilantro leaves, they bring happiness any time of day.
